Grain Salad

Create your own super tasty Hellenic salad that will be overflowing with texture and flavour. This grain salad has been a hit in George’s restaurants for years, and now we’ve made it easy to serve at home.

This Grain Salad is best dressed just prior to serving and is perfect topped with your choice of protein for a complete meal.

PREPARATION INSTRUCTIONS

As well as the contents in the Grain Salad Carton, you will need: 100g Greek Yoghurt, 50g Honey, 1 tsp Smoked Paprika, a Chopped Bunch of Fresh Parsley, a Chopped Bunch of Fresh Coriander, 1 Diced Red Onion, 50g Capers, 1 Pomegranate worth of seeds and Flake Salt.

Step 1: Bring two pots of water to the boil. Cook freekeh and lentils separately in boiling water until just tender, about 12-15 minutes. Drain and cool down.

Step 2: Mix yoghurt, honey and smoked paprika together and set aside.

Step 3: Mix cooled lentils and freekeh with other ingredients (aside from yoghurt mix and pomegranate seeds). Dress with red wine dressing, season with salt.

Step 4: Serve with yoghurt mix from step two, top with pomegranate seeds and enjoy!

Tips: For best results, dress salad just moments before it’s enjoyed!

Red Wine Dressing
Canola Oil, Red Wine Vinegar (30%), Dijon Mustard, Salt, Caramelised Sugar, Thickener (415), Black Carrot Concentrate.

Q. Is there an alternative to fresh pomegranate seeds to top the salad if they are not available?

A. Chopped dried Cranberries are a great alternative.

Q. Can I keep the salad in the fridge after making it?

A. The Grain Salad is best served immediately after dressing. To make the Grain Salad ahead of time, mix the cooled lentils and freekeh with the other ingredients (aside from the yoghurt mix, pomegranate seeds and red wine dressing). For best results, store the yoghurt mix, pomegranate seeds, red wine dressing and salad mix separately in the fridge until ready to serve.
